- Psyllium husk - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Eggs - 2 large
- Olive oil - 2 tablespoons
- Water - 100 milliliters
- Za'atar spice blend - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Cherry tomatoes - 100 grams, halved
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- In another bowl, whisk together the eggs, olive oil, and water until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough for a couple of minutes until smooth, then divide it into two equal portions.
- Shape each portion into a flat circle, about 1 cm thick, and place them on the prepared baking sheet.
- Sprinkle the za'atar spice blend evenly over each crust.
- Top each crust with crumbled feta cheese and halved cherry tomatoes.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven, garnish with chopped parsley, and serve hot.
