Ingredients

  • Almond flour - 200 grams
  • Psyllium husk - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Water - 100 milliliters
  • Za'atar spice blend - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. In another bowl, whisk together the eggs, olive oil, and water until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Knead the dough for a couple of minutes until smooth, then divide it into two equal portions.
  6. Shape each portion into a flat circle, about 1 cm thick, and place them on the prepared baking sheet.
  7. Sprinkle the za'atar spice blend evenly over each crust.
  8. Top each crust with crumbled feta cheese and halved cherry tomatoes.
  9. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  10. Remove from the oven, garnish with chopped parsley, and serve hot.
