Ingredients

  • Cauliflower - 200 grams, chopped into florets
  • Tahini - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 2 tablespoons
  • Paprika - for garnish
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. On a baking sheet, spread the cauliflower florets and drizzle with 1 tablespoon of olive oil. Roast in the preheated oven for about 20 minutes or until tender and slightly golden.
  3. In a food processor, combine the roasted cauliflower, tahini, remaining olive oil, minced garlic, lemon juice, ground cumin, salt, and water.
  4. Blend until smooth and creamy, scraping down the sides of the processor as needed. If the hummus is too thick, add a little more water until the desired consistency is reached.
  5. Transfer the hummus to a serving bowl, drizzle with a little olive oil, and sprinkle with paprika and fresh parsley for garnish.
  6. Serve with fresh vegetable sticks or keto crackers.
