Ingredients
- Cauliflower - 200 grams, chopped into florets
- Tahini - 3 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Ground cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 2 tablespoons
- Paprika - for garnish
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- On a baking sheet, spread the cauliflower florets and drizzle with 1 tablespoon of olive oil. Roast in the preheated oven for about 20 minutes or until tender and slightly golden.
- In a food processor, combine the roasted cauliflower, tahini, remaining olive oil, minced garlic, lemon juice, ground cumin, salt, and water.
- Blend until smooth and creamy, scraping down the sides of the processor as needed. If the hummus is too thick, add a little more water until the desired consistency is reached.
- Transfer the hummus to a serving bowl, drizzle with a little olive oil, and sprinkle with paprika and fresh parsley for garnish.
- Serve with fresh vegetable sticks or keto crackers.
