Ingredients

  • Zucchini - 2 medium (about 400g)
  • Olive oil - 2 tablespoons
  • Harissa paste - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200g, halved
  • Spinach - 100g, fresh
  • Feta cheese - 50g, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Using a spiralizer, turn the zucchini into noodles (zoodles) and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the harissa paste and cook for another 1-2 minutes, allowing the flavors to meld.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they soften.
  5. Add the fresh spinach and zoodles to the skillet, tossing everything together until the zoodles are just tender, about 3-5 minutes.
  6. Season with salt and black pepper to taste.
  7. Serve the pasta warm, topped with crumbled feta cheese and chopped fresh parsley.
