Ingredients

  • Mozzarella cheese - 150 grams
  • Almond flour - 50 grams
  • Coconut flour - 20 grams
  • Psyllium husk - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Egg - 1 large
  • Stevia or erythritol - 2 tablespoons (adjust to taste)
  • Heavy cream - 100 ml
  • Unsalted butter - 20 grams
  • Water - 100 ml
  • Rose water - 1 teaspoon (optional)
  • Chopped pistachios - for garnish

Steps

  1. In a microwave-safe bowl, combine the mozzarella cheese and heavy cream. Heat in the microwave for about 30 seconds, then stir until smooth.
  2. In a separate bowl, mix the almond flour, coconut flour, psyllium husk, baking powder, stevia, and egg until well combined.
  3. Add the melted cheese mixture to the dry ingredients and mix until a dough forms.
  4. On a lightly greased surface, knead the dough for a minute until smooth. Divide it into two equal portions and shape them into flat discs.
  5. In a non-stick skillet, melt the butter over medium heat. Add the dough discs and cook for about 3-4 minutes on each side until golden brown.
  6. In another small saucepan, combine water, stevia, and rose water. Heat over medium until the stevia dissolves and the syrup slightly thickens, about 5 minutes.
