- Coconut flour - 20 grams
- Psyllium husk - 1 tablespoon
- Baking powder - 1 teaspoon
- Egg - 1 large
- Stevia or erythritol - 2 tablespoons (adjust to taste)
- Heavy cream - 100 ml
- Unsalted butter - 20 grams
- Water - 100 ml
- Rose water - 1 teaspoon (optional)
- Chopped pistachios - for garnish
Steps
- In a microwave-safe bowl, combine the mozzarella cheese and heavy cream. Heat in the microwave for about 30 seconds, then stir until smooth.
- In a separate bowl, mix the almond flour, coconut flour, psyllium husk, baking powder, stevia, and egg until well combined.
- Add the melted cheese mixture to the dry ingredients and mix until a dough forms.
- On a lightly greased surface, knead the dough for a minute until smooth. Divide it into two equal portions and shape them into flat discs.
