  • Cream cheese - 50g
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Olive oil - 1 tbsp
  • Zucchini - 100g, sliced
  • Bell pepper (red or yellow) - 100g, sliced
  • Eggplant - 100g, sliced
  • Cherry tomatoes - 100g, halved
  • Italian seasoning - 1 tsp
  • Salt - to taste
  • Pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. In a mixing bowl, combine almond flour, 100g mozzarella cheese, cream cheese, egg, baking powder, olive oil, salt, and pepper. Mix until a dough forms.
  3. Spread the dough onto a parchment-lined baking sheet to form a pizza shape, about 1 cm thick.
  4. Pre-bake the crust in a preheated oven at 200°C for 10 minutes until slightly golden.
