Ingredients

  • Zucchini - 2 medium (about 450g)
  • Tahini - 4 tablespoons (60g)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Water - 2 tablespoons (30ml)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Fresh parsley - 2 tablespoons, chopped (optional for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles, then set aside.
  2. In a small bowl, mix tahini, minced garlic, olive oil, lemon juice, water, salt, and black pepper until smooth to create the sauce.
  3. Heat a non-stick skillet over medium heat and add the zoodles. Sauté for about 3-4 minutes until just tender.
  4. Remove the skillet from heat and add the tahini sauce to the zoodles, tossing gently to coat evenly.
