  • Zucchini - 2 medium
  • Shrimp (peeled and deveined) - 300 grams
  • Garlic (minced) - 4 cloves
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Parsley (chopped) - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Parmesan cheese (grated) - 30 grams

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles) and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes. Cook for 3-4 minutes, stirring occasionally, until the shrimp are pink and cooked through.
