Ingredients

  • Freekeh - 50g
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cucumber - 1 small, diced
  • Cherry tomatoes - 100g, halved
  • Red onion - 1/4, finely chopped
  • Parsley - 30g, chopped
  • Mint - 10g, chopped
  • Feta cheese - 50g, crumbled
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the freekeh under cold water to remove any impurities.
  2. In a saucepan, add 200ml of water and bring it to a boil. Add the rinsed freekeh, reduce the heat, cover, and simmer for about 20 minutes until tender.
  3. Once cooked, drain any excess water and let the freekeh cool to room temperature.
  4. In a large bowl, combine the cooled freekeh, diced cucumber, halved cherry tomatoes, chopped red onion, parsley, and mint.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the salad and toss gently to combine all ingredients.
  7. Top with crumbled feta cheese and serve immediately or refrigerate for 30 minutes to enhance the flavors.
