Ingredients

  • Freekeh - 100 grams
  • Olive oil - 2 tablespoons
  • Onion, diced - 1 small (about 70 grams)
  • Garlic, minced - 2 cloves
  • Bell pepper, diced - 1 small (about 100 grams)
  • Zucchini, diced - 1 small (about 100 grams)
  • Vegetable broth - 400 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the freekeh under cold water and drain well.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and continue to sauté for another minute until fragrant.
  4. Stir in the diced bell pepper and zucchini, cooking for an additional 5 minutes until slightly softened.
  5. Add the rinsed freekeh to the pot and stir well to combine with the vegetables.
  6. Pour in the vegetable broth and add the ground cumin, ground coriander, paprika, salt, and black pepper. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the freekeh is tender and the liquid is absorbed.
  8. Remove from heat, fluff the freekeh with a fork, and stir in the chopped parsley and lemon juice before serving.
