Ingredients
- Freekeh - 100 grams
- Olive oil - 2 tablespoons
- Onion, diced - 1 small (about 70 grams)
- Garlic, minced - 2 cloves
- Bell pepper, diced - 1 small (about 100 grams)
- Zucchini, diced - 1 small (about 100 grams)
- Vegetable broth - 400 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Rinse the freekeh under cold water and drain well.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Stir in the diced bell pepper and zucchini, cooking for an additional 5 minutes until slightly softened.
- Add the rinsed freekeh to the pot and stir well to combine with the vegetables.
- Pour in the vegetable broth and add the ground cumin, ground coriander, paprika, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the freekeh is tender and the liquid is absorbed.
- Remove from heat, fluff the freekeh with a fork, and stir in the chopped parsley and lemon juice before serving.
