Ingredients
- Almond flour - 1 cup
- Psyllium husk powder - 2 tablespoons
- Olive oil - 2 tablespoons
- Eggs - 2 large
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/2 teaspoon
- Zaatar spice - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Radishes - 50 grams, thinly sliced
- Feta cheese - 50 grams, crumbled
- Parsley - 2 tablespoons, chopped
- Mint - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, salt, and pepper.
- In another bowl, whisk together the eggs and olive oil until well combined.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Line a baking sheet with parchment paper and press the dough into a round pizza shape, about 1/2 inch thick.
- Bake the crust in the preheated oven for 15 minutes or until golden brown.
- While the crust is baking, prepare the salad topping by mixing cherry tomatoes, cucumber, radishes, parsley, mint, lemon juice, and zaatar spice in a bowl.
- Once the crust is done, remove it from the oven and let it cool slightly.
- Top the pizza with the fresh salad mixture and sprinkle crumbled feta cheese on top.
