Ingredients

  • Almond flour - 1 cup
  • Psyllium husk powder - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Eggs - 2 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/2 teaspoon
  • Zaatar spice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Radishes - 50 grams, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Parsley - 2 tablespoons, chopped
  • Mint - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, salt, and pepper.
  3. In another bowl, whisk together the eggs and olive oil until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Line a baking sheet with parchment paper and press the dough into a round pizza shape, about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15 minutes or until golden brown.
  7. While the crust is baking, prepare the salad topping by mixing cherry tomatoes, cucumber, radishes, parsley, mint, lemon juice, and zaatar spice in a bowl.
  8. Once the crust is done, remove it from the oven and let it cool slightly.
  9. Top the pizza with the fresh salad mixture and sprinkle crumbled feta cheese on top.
  10. Slice and serve immediately, drizzled with extra olive oil if desired.
