Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Cauliflower - 400 grams, grated into rice-like pieces
  • Olive oil - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Greek yogurt - 100 grams
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the lamb cubes and season with salt, black pepper, and cumin. Sear the lamb for about 8-10 minutes until browned on all sides.
  2. Reduce the heat to low, add 1 cup of water, cover, and let the lamb simmer for 20-25 minutes until tender.
  3. While the lamb is cooking, prepare the cauliflower rice. In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the grated cauliflower and sauté for 5-7 minutes until tender and slightly golden. Season with salt and pepper to taste.
  4. In a small bowl, mix together the Greek yogurt, tahini, minced garlic, and lemon juice until smooth. Add water if needed to reach your desired consistency.
  5. Once the lamb is cooked, assemble the dish by placing a portion of cauliflower rice on each plate. Top with the lamb and drizzle the garlic yogurt sauce over everything.
  6. Garnish with chopped parsley and serve immediately.
