Ingredients
- Lamb shoulder - 300 grams, cut into cubes
- Cauliflower - 400 grams, grated into rice-like pieces
- Olive oil - 3 tablespoons
- Garlic - 4 cloves, minced
- Greek yogurt - 100 grams
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the lamb cubes and season with salt, black pepper, and cumin. Sear the lamb for about 8-10 minutes until browned on all sides.
- Reduce the heat to low, add 1 cup of water, cover, and let the lamb simmer for 20-25 minutes until tender.
- While the lamb is cooking, prepare the cauliflower rice. In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the grated cauliflower and sauté for 5-7 minutes until tender and slightly golden. Season with salt and pepper to taste.
- In a small bowl, mix together the Greek yogurt, tahini, minced garlic, and lemon juice until smooth. Add water if needed to reach your desired consistency.
- Once the lamb is cooked, assemble the dish by placing a portion of cauliflower rice on each plate. Top with the lamb and drizzle the garlic yogurt sauce over everything.
- Garnish with chopped parsley and serve immediately.
