Ingredients
- Almond flour - 200 grams
- Psyllium husk - 2 tablespoons
- Eggs - 1 large
- Olive oil - 3 tablespoons
- Water - 60 ml
- Salt - 1 teaspoon
- Spinach - 150 grams, chopped
- Feta cheese - 100 grams, crumbled
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Cumin - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk, and salt.
- In another bowl, whisk the egg, olive oil, and water together.
- Add the wet ingredients to the dry ingredients and mix until a dough forms. Let it rest for 10 minutes.
- In a skillet, heat a little olive oil over medium heat and sauté the onion until translucent.
- Add the garlic and chopped spinach to the skillet, cooking until the spinach is wilted. Stir in the cumin and black pepper, then remove from heat.
- In a bowl, combine the sautéed spinach mixture with crumbled feta cheese.
- Divide the rested dough into 4 equal pieces and roll each piece into a circle about 10 cm in diameter.
- Place a spoonful of the spinach and feta filling in the center of each circle.
- Fold the dough over the filling to create a half-moon shape and pinch the edges to seal.
- Place the fatayer on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.
