Ingredients

  • Almond flour - 200 grams
  • Psyllium husk - 2 tablespoons
  • Eggs - 1 large
  • Olive oil - 3 tablespoons
  • Water - 60 ml
  • Salt - 1 teaspoon
  • Spinach - 150 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, and salt.
  3. In another bowl, whisk the egg, olive oil, and water together.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms. Let it rest for 10 minutes.
  5. In a skillet, heat a little olive oil over medium heat and sauté the onion until translucent.
  6. Add the garlic and chopped spinach to the skillet, cooking until the spinach is wilted. Stir in the cumin and black pepper, then remove from heat.
  7. In a bowl, combine the sautéed spinach mixture with crumbled feta cheese.
  8. Divide the rested dough into 4 equal pieces and roll each piece into a circle about 10 cm in diameter.
  9. Place a spoonful of the spinach and feta filling in the center of each circle.
  10. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal.
  11. Place the fatayer on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  12. Let cool slightly before serving.
