- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Start by washing the eggplant and cutting it into small cubes (about 1 cm).
- Sprinkle the eggplant cubes with salt and let them sit for 15 minutes to draw out excess moisture.
- Rinse the eggplant cubes under cold water and pat them dry with a paper towel.
- In a large skillet, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
- Stir in the eggplant cubes and cook for 10-12 minutes, stirring occasionally, until the eggplant is tender and slightly golden.
- Add the ground cumin, ground coriander, black pepper, and salt to the skillet, mixing well to coat the eggplant evenly with the spices.
- Remove the skillet from heat and stir in the chopped parsley and lemon juice.
- Serve warm as a side dish or a base for grilled meats.
