Ingredients
- 1 medium eggplant - 250g
- 200g ground beef
- 1 small onion - 100g, finely chopped
- 2 cloves garlic - minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- 200g canned diced tomatoes
- Salt - to taste
- Pepper - to taste
- 100g heavy cream
- 1 large egg - beaten
- 50g grated Parmesan cheese
- 1 tablespoon fresh parsley - chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- Place the eggplant slices on a baking sheet, brush with olive oil, and roast in the oven for 20 minutes, flipping halfway through until golden brown.
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 7-10 minutes.
- Stir in the diced tomatoes, cinnamon, cumin, salt, and pepper. Simmer for 10 minutes until the mixture thickens.
- In a bowl, combine heavy cream, beaten egg, and Parmesan cheese to create the béchamel sauce.
- In a baking dish, layer half of the roasted eggplant, followed by the beef mixture, then the remaining eggplant, and finally pour the béchamel sauce on top.
- Bake in the preheated oven for 20 minutes until the top is golden and bubbling.
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
