Ingredients

  • 1 medium eggplant - 250g
  • 200g ground beef
  • 1 small onion - 100g, finely chopped
  • 2 cloves garlic - minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 200g canned diced tomatoes
  • Salt - to taste
  • Pepper - to taste
  • 100g heavy cream
  • 1 large egg - beaten
  • 50g grated Parmesan cheese
  • 1 tablespoon fresh parsley - chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. Place the eggplant slices on a baking sheet, brush with olive oil, and roast in the oven for 20 minutes, flipping halfway through until golden brown.
  5. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  6. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 7-10 minutes.
  7. Stir in the diced tomatoes, cinnamon, cumin, salt, and pepper. Simmer for 10 minutes until the mixture thickens.
  8. In a bowl, combine heavy cream, beaten egg, and Parmesan cheese to create the béchamel sauce.
  9. In a baking dish, layer half of the roasted eggplant, followed by the beef mixture, then the remaining eggplant, and finally pour the béchamel sauce on top.
  10. Bake in the preheated oven for 20 minutes until the top is golden and bubbling.
  11. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
