Ingredients
- Eggplant - 1 medium (about 300g)
- Ground beef or lamb - 200g
- Onion - 1 small, finely chopped (about 70g)
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons (30g)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons (30ml)
- Cheese (mozzarella or feta) - 100g, grated or crumbled
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Slice the eggplant into 1 cm thick rounds, sprinkle with salt, and let sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat dry with paper towels.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the ground beef or lamb to the skillet and cook until browned. Stir in the tomato paste, cumin, paprika, cinnamon, salt, and pepper. Cook for another 5 minutes, then remove from heat.
- In a baking dish, layer half of the eggplant slices on the bottom. Spread half of the meat mixture over the eggplant, then sprinkle half of the cheese on top.
- Repeat the layering with the remaining eggplant, meat mixture, and cheese.
- Drizzle the top with the remaining tablespoon of olive oil.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
- Let the casserole cool for a few minutes, garnish with fresh parsley, and serve.
