Ingredients

  • Medjool dates - 100 grams (pitted)
  • Almond flour - 30 grams
  • Walnuts - 20 grams (chopped)
  • Unsweetened cocoa powder - 10 grams
  • Coconut flakes - 15 grams
  • Ground cinnamon - 1/2 teaspoon
  • Sea salt - a pinch
  • Vanilla extract - 1/2 teaspoon

Steps

  1. In a food processor, combine the pitted Medjool dates, almond flour, chopped walnuts, unsweetened cocoa powder, ground cinnamon, sea salt, and vanilla extract.
  2. Pulse the mixture until it forms a sticky, dough-like consistency. If the mixture is too dry, add a teaspoon of water to help it bind.
  3. Once the mixture is ready, scoop out small portions (about 15 grams each) and roll them into balls using your hands.
  4. Roll each ball in the coconut flakes until fully coated.
  5. Place the finished date balls on a plate and refrigerate for at least 10 minutes to firm up before serving.
