Ingredients

  • Chicken thighs - 400 grams, skin-on and bone-in
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, chopped
  • Bell pepper - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Chicken broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Heat olive oil in a large skillet or tagine pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken thighs, skin-side down, and sear until browned, about 5-7 minutes.
  5. Flip the chicken and add ground cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix well to coat the chicken.
  6. Add the chopped zucchini, bell pepper, and diced tomato to the pot.
  7. Pour in the chicken broth and bring to a simmer.
  8. Cover the pot and reduce the heat to low. Let it cook for 30 minutes, or until the chicken is cooked through and tender.
  9. Remove from heat and let rest for 5 minutes before serving.
  10. Garnish with fresh parsley before plating.
