- Chicken thighs - 400 grams, skin-on and bone-in
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 1 medium, chopped
- Bell pepper - 1 medium, chopped
- Tomato - 1 medium, diced
- Chicken broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Heat olive oil in a large skillet or tagine pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chicken thighs, skin-side down, and sear until browned, about 5-7 minutes.
- Flip the chicken and add ground cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix well to coat the chicken.
- Add the chopped zucchini, bell pepper, and diced tomato to the pot.
- Pour in the chicken broth and bring to a simmer.
- Cover the pot and reduce the heat to low. Let it cook for 30 minutes, or until the chicken is cooked through and tender.
- Remove from heat and let rest for 5 minutes before serving.
- Garnish with fresh parsley before plating.
