Ingredients
- Chicken breast - 300 grams
- Cauliflower - 1 medium head (about 600 grams)
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Greek yogurt - 4 tablespoons (for serving)
Steps
- Start by preheating your oven to 200°C (400°F).
- In a bowl, combine olive oil, garlic powder, ground cumin, paprika, ground turmeric, ground cinnamon, salt, and black pepper to create a marinade.
- Cut the chicken breast into thin strips and coat them with the marinade. Let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the cauliflower rice. Remove the leaves and stem from the cauliflower and chop it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Add the cauliflower rice and sauté for about 5-7 minutes until it becomes tender. Season with salt and pepper to taste.
- Spread the marinated chicken strips on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes until the chicken is cooked through and slightly crispy.
- Once the chicken is done, remove it from the oven and let it rest for a few minutes. Meanwhile, divide the cauliflower rice between two plates.
- Slice the chicken into bite-sized pieces and place it on top of the cauliflower rice. Drizzle with lemon juice and garnish with fresh parsley.
- Serve with a dollop of Greek yogurt on the side.
