Ingredients

  • Chicken breast - 300 grams
  • Cauliflower - 1 medium head (about 600 grams)
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Greek yogurt - 4 tablespoons (for serving)

Steps

  1. Start by preheating your oven to 200°C (400°F).
  2. In a bowl, combine olive oil, garlic powder, ground cumin, paprika, ground turmeric, ground cinnamon, salt, and black pepper to create a marinade.
  3. Cut the chicken breast into thin strips and coat them with the marinade. Let it marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare the cauliflower rice. Remove the leaves and stem from the cauliflower and chop it into florets.
  5. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  6. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Add the cauliflower rice and sauté for about 5-7 minutes until it becomes tender. Season with salt and pepper to taste.
  7. Spread the marinated chicken strips on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes until the chicken is cooked through and slightly crispy.
  8. Once the chicken is done, remove it from the oven and let it rest for a few minutes. Meanwhile, divide the cauliflower rice between two plates.
  9. Slice the chicken into bite-sized pieces and place it on top of the cauliflower rice. Drizzle with lemon juice and garnish with fresh parsley.
  10. Serve with a dollop of Greek yogurt on the side.
