Ingredients
- Chicken thighs - 400 grams
- Cauliflower - 300 grams (riced)
- Olive oil - 2 tablespoons
- Onion - 1 medium (sliced)
- Garlic - 3 cloves (minced)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Season the chicken thighs with salt, black pepper, cumin, coriander, paprika, and turmeric. Add the seasoned chicken to the pot and brown on both sides, about 6-7 minutes.
- Pour in the water, cover the pot, and bring to a boil. Reduce the heat to low and simmer for 20 minutes until the chicken is cooked through.
- While the chicken is cooking, prepare the cauliflower rice. In a separate pan, heat the remaining olive oil over medium heat and add the riced cauliflower. Sauté for 5-7 minutes until tender, seasoning with a pinch of salt and pepper.
- Once the chicken is cooked, remove it from the pot and let it rest for a few minutes before slicing.
- Serve the sliced chicken over the cauliflower rice, drizzling some of the cooking broth on top. Garnish with chopped parsley.
