Ingredients

  • Chicken thighs - 400 grams
  • Cauliflower - 300 grams (riced)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium (sliced)
  • Garlic - 3 cloves (minced)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - 2 tablespoons (chopped, for garnish)

Steps

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Season the chicken thighs with salt, black pepper, cumin, coriander, paprika, and turmeric. Add the seasoned chicken to the pot and brown on both sides, about 6-7 minutes.
  4. Pour in the water, cover the pot, and bring to a boil. Reduce the heat to low and simmer for 20 minutes until the chicken is cooked through.
  5. While the chicken is cooking, prepare the cauliflower rice. In a separate pan, heat the remaining olive oil over medium heat and add the riced cauliflower. Sauté for 5-7 minutes until tender, seasoning with a pinch of salt and pepper.
  6. Once the chicken is cooked, remove it from the pot and let it rest for a few minutes before slicing.
  7. Serve the sliced chicken over the cauliflower rice, drizzling some of the cooking broth on top. Garnish with chopped parsley.
