Ingredients
- Chicken livers - 250 grams
- Unsalted butter - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a skillet, melt 25 grams of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Increase the heat to medium-high and add the chicken livers to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the livers are browned on the outside but still slightly pink in the center.
- Stir in cumin, allspice, salt, and black pepper. Cook for another 2-3 minutes until the spices are fragrant.
- Remove from heat and let the mixture cool for a few minutes. Then, transfer it to a food processor.
- Add the remaining butter (25 grams), lemon juice, and half of the chopped parsley to the food processor. Blend until smooth and creamy.
- Taste and adjust seasoning if necessary. Transfer the pâté to a serving dish and garnish with the remaining parsley. Chill in the refrigerator for at least 30 minutes before serving.
