Ingredients

  • Chicken livers - 250 grams
  • Unsalted butter - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a skillet, melt 25 grams of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Increase the heat to medium-high and add the chicken livers to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the livers are browned on the outside but still slightly pink in the center.
  4. Stir in cumin, allspice, salt, and black pepper. Cook for another 2-3 minutes until the spices are fragrant.
  5. Remove from heat and let the mixture cool for a few minutes. Then, transfer it to a food processor.
  6. Add the remaining butter (25 grams), lemon juice, and half of the chopped parsley to the food processor. Blend until smooth and creamy.
  7. Taste and adjust seasoning if necessary. Transfer the pâté to a serving dish and garnish with the remaining parsley. Chill in the refrigerator for at least 30 minutes before serving.
