Ingredients
- Almond flour - 150 grams
- Psyllium husk - 10 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Egg - 1 large
- Water - 60 ml
- Mozzarella cheese - 100 grams, shredded
- Feta cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Zaatar spice - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- In a separate bowl, whisk together the egg and water until well combined.
- Add the egg mixture to the dry ingredients and mix until a dough forms.
- Knead the dough for a couple of minutes until smooth, then let it rest for 5 minutes.
- In another bowl, mix together the shredded mozzarella, crumbled feta, olive oil, black pepper, and zaatar spice until well incorporated.
- Divide the dough into 4 equal balls and flatten each ball into a circle about 10 cm in diameter.
- Place a generous tablespoon of the cheese mixture in the center of each circle.
- Fold the edges of the dough over the filling, pinching to seal the edges securely.
- Arrange the filled sfiha on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
