Ingredients

  • Almond flour - 150 grams
  • Psyllium husk - 10 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Egg - 1 large
  • Water - 60 ml
  • Mozzarella cheese - 100 grams, shredded
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Zaatar spice - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. In a separate bowl, whisk together the egg and water until well combined.
  4. Add the egg mixture to the dry ingredients and mix until a dough forms.
  5. Knead the dough for a couple of minutes until smooth, then let it rest for 5 minutes.
  6. In another bowl, mix together the shredded mozzarella, crumbled feta, olive oil, black pepper, and zaatar spice until well incorporated.
  7. Divide the dough into 4 equal balls and flatten each ball into a circle about 10 cm in diameter.
  8. Place a generous tablespoon of the cheese mixture in the center of each circle.
  9. Fold the edges of the dough over the filling, pinching to seal the edges securely.
  10. Arrange the filled sfiha on a baking sheet lined with parchment paper.
  11. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  12. Remove from the oven and let cool slightly before serving.
