Ingredients

  • Almond flour - 200g
  • Psyllium husk - 2 tbsp
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Egg - 1 large
  • Cream cheese - 100g, softened
  • Mozzarella cheese - 100g, shredded
  • Feta cheese - 50g, crumbled
  • Olive oil - 1 tbsp
  • Water - 50ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. Add the egg, cream cheese, and olive oil to the dry ingredients. Mix until a dough forms.
  4. Gradually add water until the dough is smooth and pliable.
  5. In another bowl, mix the mozzarella and feta cheese until well combined.
  6. Divide the dough into 4 equal portions and roll each portion into a circle on a parchment-lined surface.
  7. Place a generous amount of the cheese mixture in the center of each circle.
  8. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal.
  9. Place the fatayer on a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 20 minutes or until golden brown.
  11. Remove from the oven and let cool for a few minutes before serving.
