Ingredients
- Almond flour - 200g
- Psyllium husk - 2 tbsp
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Egg - 1 large
- Cream cheese - 100g, softened
- Mozzarella cheese - 100g, shredded
- Feta cheese - 50g, crumbled
- Olive oil - 1 tbsp
- Water - 50ml
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- Add the egg, cream cheese, and olive oil to the dry ingredients. Mix until a dough forms.
- Gradually add water until the dough is smooth and pliable.
- In another bowl, mix the mozzarella and feta cheese until well combined.
- Divide the dough into 4 equal portions and roll each portion into a circle on a parchment-lined surface.
- Place a generous amount of the cheese mixture in the center of each circle.
- Fold the dough over the filling to create a half-moon shape, pinching the edges to seal.
- Place the fatayer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
