Ingredients

  • Cauliflower - 200 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 10 grams, finely chopped
  • Green onion (scallion) - 2, thinly sliced
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains, then transfer to a mixing bowl.
  3. Add the halved cherry tomatoes, diced cucumber, chopped parsley, chopped mint, and sliced green onion to the bowl with the cauliflower.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the cauliflower mixture and toss gently until all ingredients are well combined.
