Ingredients

  • Cauliflower Rice - 300 grams
  • Olive Oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell Pepper - 1 small, diced
  • Carrot - 1 small, diced
  • Almonds - 30 grams, slivered
  • Ground Cumin - 1 teaspoon
  • Ground Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Parsley - 2 tablespoons, chopped
  • Lemon Juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced bell pepper, and diced carrot to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
  4. Stir in the cauliflower rice, slivered almonds, ground cumin, ground coriander, cinnamon, salt, and black pepper. Mix well and cook for another 5 minutes, allowing the flavors to meld.
  5. Remove the skillet from heat and mix in the chopped parsley and lemon juice.
  6. Transfer the mixture to a baking dish and spread evenly. Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
  7. Remove from the oven, let it cool for a few minutes, and serve warm.
