Ingredients
- Cauliflower Rice - 300 grams
- Olive Oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell Pepper - 1 small, diced
- Carrot - 1 small, diced
- Almonds - 30 grams, slivered
- Ground Cumin - 1 teaspoon
- Ground Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Parsley - 2 tablespoons, chopped
- Lemon Juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced bell pepper, and diced carrot to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
- Stir in the cauliflower rice, slivered almonds, ground cumin, ground coriander, cinnamon, salt, and black pepper. Mix well and cook for another 5 minutes, allowing the flavors to meld.
- Remove the skillet from heat and mix in the chopped parsley and lemon juice.
- Transfer the mixture to a baking dish and spread evenly. Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
- Remove from the oven, let it cool for a few minutes, and serve warm.
