Ingredients

  • Cauliflower - 200 grams
  • Cucumber - 100 grams, diced
  • Tomato - 100 grams, diced
  • Radishes - 50 grams, thinly sliced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sumac - 1 teaspoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and spread them on a baking sheet.
  3. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat.
  4. Roast the cauliflower for 10-12 minutes until golden brown and tender, then allow to cool.
  5. In a large bowl, combine the cucumber, tomato, radishes, parsley, and mint.
  6. In a small bowl, whisk together the lemon juice, remaining olive oil, minced garlic, and sumac if using.
  7. Add the roasted cauliflower to the vegetable mixture and pour the dressing over the salad.
  8. Toss everything gently to combine, then serve immediately.
