Ingredients
- Cauliflower - 200 grams
- Cucumber - 100 grams, diced
- Tomato - 100 grams, diced
- Radishes - 50 grams, thinly sliced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sumac - 1 teaspoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and spread them on a baking sheet.
- Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat.
- Roast the cauliflower for 10-12 minutes until golden brown and tender, then allow to cool.
- In a large bowl, combine the cucumber, tomato, radishes, parsley, and mint.
- In a small bowl, whisk together the lemon juice, remaining olive oil, minced garlic, and sumac if using.
- Add the roasted cauliflower to the vegetable mixture and pour the dressing over the salad.
- Toss everything gently to combine, then serve immediately.
