Ingredients
- Green cabbage - 1 small head
- Ground beef - 300 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Water - 250 milliliters
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- Bring a large pot of water to a boil and carefully remove the core from the cabbage head.
- Blanch the cabbage in boiling water for about 5 minutes until the leaves are softened. Remove and let cool.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3 minutes.
- Add minced garlic and cook for another minute until fragrant.
- In a bowl, combine ground beef, cooked onion and garlic, tomato paste, cumin, allspice, salt, and black pepper. Mix well to combine.
- Carefully peel off 8-10 cabbage leaves. Place about 2-3 tablespoons of the beef mixture in the center of each leaf.
- Roll the cabbage leaf tightly around the filling, folding the sides in as you go to secure the filling. Repeat with remaining leaves and filling.
- In a baking dish, arrange the cabbage rolls seam-side down. Pour water and lemon juice over the rolls.
- Cover with aluminum foil and bake in the preheated oven for 40-45 minutes.
- Remove from oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
