  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Canned diced tomatoes - 200 grams
  • Beef broth - 500 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onions and sauté until they become translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Increase the heat to medium-high and add the beef cubes to the pot, browning them on all sides, approximately 5-7 minutes.
  5. Add the sliced carrot, diced celery, and diced zucchini, stirring well to combine.
  6. Sprinkle the cumin, cinnamon, paprika, salt, and black pepper over the mixture, stirring to coat the vegetables and meat evenly.
  7. Pour in the canned diced tomatoes and beef broth, bringing the mixture to a boil.
  8. Reduce the heat to low, cover, and let it simmer for 60 minutes, stirring occasionally, until the beef is tender.
  9. Once cooked, taste and adjust seasoning if necessary.
