Ingredients

  • Ground beef - 300 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cauliflower - 400 grams, riced
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon
  • Cucumber - 1 small, diced (for garnish)
  • Tomato - 1 small, diced (for garnish)
  • Mint leaves - a few, for garnish

Steps

  1. In a large bowl, combine the ground beef, finely chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix until well combined.
  2. Shape the beef mixture into small oval kofta patties, about 5 cm long.
  3. In a large skillet, heat the olive oil over medium heat. Add the kofta patties and cook for about 5-7 minutes on each side until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the riced cauliflower and sauté for about 2-3 minutes until slightly tender.
  5. Pour in the vegetable broth and lemon juice, cover, and let it simmer for about 10 minutes, until the cauliflower is cooked and the liquid is absorbed.
  6. Serve the kofta over the cauliflower rice, topped with diced cucumber, tomato, and mint leaves for garnish.
