- Ground beef - 300 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Cauliflower - 400 grams, riced
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
- Cucumber - 1 small, diced (for garnish)
- Tomato - 1 small, diced (for garnish)
- Mint leaves - a few, for garnish
Steps
- In a large bowl, combine the ground beef, finely chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix until well combined.
- Shape the beef mixture into small oval kofta patties, about 5 cm long.
- In a large skillet, heat the olive oil over medium heat. Add the kofta patties and cook for about 5-7 minutes on each side until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the riced cauliflower and sauté for about 2-3 minutes until slightly tender.
- Pour in the vegetable broth and lemon juice, cover, and let it simmer for about 10 minutes, until the cauliflower is cooked and the liquid is absorbed.
- Serve the kofta over the cauliflower rice, topped with diced cucumber, tomato, and mint leaves for garnish.
