Ingredients

  • Ground beef - 300 grams
  • Onion, finely grated - 1 small (about 50 grams)
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon (for brushing)
  • Greek yogurt - 100 grams (for sauce)
  • Cucumber, grated - 1/2 medium (about 50 grams)
  • Lemon juice - 1 tablespoon
  • Salt - a pinch (for sauce)
  • Mint leaves, chopped - 1 tablespoon (for sauce)

Steps

  1. In a large mixing bowl, combine the ground beef, grated onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Divide the beef mixture into 4 equal portions and shape each portion into an oval-shaped kofta, about the size of your palm.
  3. Preheat a grill or grill pan over medium-high heat. Brush the koftas lightly with olive oil.
  4. Grill the koftas for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
  5. While the koftas are cooking, prepare the cucumber-yogurt sauce by mixing the Greek yogurt, grated cucumber, lemon juice, a pinch of salt, and chopped mint leaves in a small bowl. Stir until well mixed.
  6. Once the koftas are done, remove them from the grill and let them rest for a few minutes before serving.
  7. Serve the koftas hot with the cucumber-yogurt sauce on the side.
