- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 1 cup
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Start by washing and cutting the cauliflower into florets, then pulse in a food processor until it resembles rice grains.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Stir in the cumin, coriander, turmeric, salt, and black pepper, cooking for another minute to toast the spices.
- Add the riced cauliflower to the skillet, mixing well with the onion and spices. Sauté for about 5 minutes until the cauliflower begins to soften.
- Pour in the vegetable broth, cover the skillet, and let it simmer for 10 minutes until the cauliflower is fully cooked and the broth is absorbed.
- Remove from heat, stir in the chopped parsley and lemon juice, adjusting salt and pepper to taste before serving.
