Ingredients
- Ground beef - 250 grams
- Medium eggplant - 1 (about 200 grams)
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
- Lettuce leaves - 4 (for serving)
- Tomato - 1, sliced (for serving)
- Cucumber - 1/2, sliced (for serving)
Steps
- Preheat your grill or pan over medium heat.
- Cut the eggplant in half lengthwise and brush the cut sides with 1 tablespoon of olive oil. Season with salt and pepper.
- Place the eggplant halves on the grill or pan, cut side down, and cook for about 10-15 minutes until soft and charred.
- While the eggplant is cooking, in a bowl, mix the ground beef with cumin, salt, and pepper. Form into 2 patties.
- In a separate bowl, combine tahini, lemon juice, minced garlic, and the remaining 1 tablespoon of olive oil. Mix well to form a smooth Baba Ghanoush.
- Once the eggplant is cooked, scoop out the flesh and add it to the tahini mixture. Blend until smooth. Adjust seasoning to taste.
- Increase the heat to medium-high and grill the beef patties for about 4-5 minutes per side or until cooked to your desired doneness.
- To assemble the burgers, place a beef patty on a lettuce leaf, top with a generous spoonful of Baba Ghanoush, sliced tomatoes, and cucumbers. Add a sprinkle of chopped parsley on top.
