Ingredients

  • Ground beef - 250 grams
  • Medium eggplant - 1 (about 200 grams)
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped
  • Lettuce leaves - 4 (for serving)
  • Tomato - 1, sliced (for serving)
  • Cucumber - 1/2, sliced (for serving)

Steps

  1. Preheat your grill or pan over medium heat.
  2. Cut the eggplant in half lengthwise and brush the cut sides with 1 tablespoon of olive oil. Season with salt and pepper.
  3. Place the eggplant halves on the grill or pan, cut side down, and cook for about 10-15 minutes until soft and charred.
  4. While the eggplant is cooking, in a bowl, mix the ground beef with cumin, salt, and pepper. Form into 2 patties.
  5. In a separate bowl, combine tahini, lemon juice, minced garlic, and the remaining 1 tablespoon of olive oil. Mix well to form a smooth Baba Ghanoush.
  6. Once the eggplant is cooked, scoop out the flesh and add it to the tahini mixture. Blend until smooth. Adjust seasoning to taste.
  7. Increase the heat to medium-high and grill the beef patties for about 4-5 minutes per side or until cooked to your desired doneness.
  8. To assemble the burgers, place a beef patty on a lettuce leaf, top with a generous spoonful of Baba Ghanoush, sliced tomatoes, and cucumbers. Add a sprinkle of chopped parsley on top.
