Ingredients

  • Eggplant - 1 medium (about 250g)
  • Tahini - 2 tablespoons (30g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon (15ml)
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Pierce the eggplant several times with a fork to allow steam to escape during roasting.
  3. Place the eggplant on a baking sheet and roast for 30-35 minutes, or until the skin is charred and the flesh is soft.
  4. Remove the eggplant from the oven and let it cool for a few minutes. Once cooled, cut it in half and scoop out the flesh into a mixing bowl.
  5. Add tahini, olive oil, minced garlic, lemon juice, ground cumin, salt, and black pepper to the bowl with the eggplant flesh.
  6. Using a fork or a food processor, blend the mixture until creamy and smooth.
  7. Taste and adjust seasoning if necessary, then transfer to a serving bowl.
  8. Drizzle with additional olive oil and sprinkle with chopped parsley for garnish before serving.
