Ingredients
- Eggplant - 1 medium (about 250g)
- Tahini - 2 tablespoons (30g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon (15ml)
- Ground cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Pierce the eggplant several times with a fork to allow steam to escape, then place it on a baking sheet.
- Roast the eggplant in the oven for about 30-35 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplant from the oven and let it cool for a few minutes before handling.
- Once cooled, cut the eggplant in half and scoop out the flesh into a mixing bowl.
- Add tahini, olive oil, minced garlic, lemon juice, ground cumin, salt, and black pepper to the bowl.
- Using a fork or a food processor, blend all the ingredients until smooth and creamy.
- Taste and adjust seasoning if necessary.
- Transfer the Baba Ganoush to a serving bowl, drizzle with additional olive oil, and sprinkle with chopped parsley for garnish.
- Serve with cucumber slices or celery sticks for dipping.
