- Almond flour - 100g
- Eggs - 2 large
- Unsweetened almond milk - 150ml
- Baking powder - 1 tsp
- Erythritol - 2 tbsp
- Salt - a pinch
- Ricotta cheese - 100g
- Chopped pistachios - 20g
- Rose water - 1 tsp
- Coconut oil - for frying
Steps
- In a bowl, mix almond flour, eggs, almond milk, baking powder, erythritol, and salt until a smooth batter forms.
- Heat a non-stick skillet over medium heat and lightly grease with coconut oil.
- Pour about 2 tablespoons of batter onto the skillet to form small pancakes, and cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another minute. Repeat until all batter is used.
- In a separate bowl, combine ricotta cheese, chopped pistachios, and rose water for the filling.
- Take one pancake, place a tablespoon of the ricotta mixture in the center, and fold the pancake over to create a half-moon shape. Press the edges to seal.
- Repeat with remaining pancakes and filling.
- Serve warm, optionally drizzled with additional rose water or sprinkled with extra pistachios.
