Ingredients

  • Almond flour - 100g
  • Eggs - 2 large
  • Unsweetened almond milk - 150ml
  • Baking powder - 1 tsp
  • Erythritol - 2 tbsp
  • Salt - a pinch
  • Ricotta cheese - 100g
  • Chopped pistachios - 20g
  • Rose water - 1 tsp
  • Coconut oil - for frying

Steps

  1. In a bowl, mix almond flour, eggs, almond milk, baking powder, erythritol, and salt until a smooth batter forms.
  2. Heat a non-stick skillet over medium heat and lightly grease with coconut oil.
  3. Pour about 2 tablespoons of batter onto the skillet to form small pancakes, and cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another minute. Repeat until all batter is used.
  4. In a separate bowl, combine ricotta cheese, chopped pistachios, and rose water for the filling.
  5. Take one pancake, place a tablespoon of the ricotta mixture in the center, and fold the pancake over to create a half-moon shape. Press the edges to seal.
  6. Repeat with remaining pancakes and filling.
  7. Serve warm, optionally drizzled with additional rose water or sprinkled with extra pistachios.
