Ingredients

  • Bulgur wheat - 100 grams
  • Ground lamb or beef - 150 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Olive oil - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, sliced
  • Water - 250 ml

Steps

  1. Soak the bulgur wheat in water for 30 minutes, then drain and squeeze out excess water.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until softened.
  3. Add the ground lamb or beef to the skillet, followed by cinnamon, allspice, salt, and black pepper. Cook until the meat is browned and fully cooked.
  4. Stir in the toasted pine nuts and chopped parsley, then remove from heat and set aside.
  5. In a bowl, mix the soaked bulgur with the remaining olive oil and season with salt and pepper.
  6. Press half of the bulgur mixture into the bottom of a greased baking dish to form a crust.
  7. Spread the meat mixture evenly over the bulgur crust, then layer the sliced tomatoes on top.
  8. Finish by pressing the remaining bulgur mixture over the top to create a second layer.
  9. Bake in a preheated oven at 180°C (350°F) for about 30-35 minutes, or until the top is golden brown.
  10. Allow to cool for a few minutes, slice, and serve warm.
