- Fine bulgur wheat - 100 grams
- Ground beef or lamb - 200 grams
- Onion - 1 small (finely chopped)
- Pine nuts - 30 grams (toasted)
- Parsley - 15 grams (finely chopped)
- Mint - 10 grams (finely chopped)
- Allspice - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tomato sauce - 100 grams
- Mozzarella cheese - 150 grams (shredded)
- Pita bread - 2 pieces (as the pizza base)
- Lemon - 1 (for juice)
Steps
- Soak the bulgur wheat in warm water for about 15 minutes until it softens, then drain and squeeze out excess water.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
- Add the ground meat to the skillet, cooking until browned, then stir in the toasted pine nuts, parsley, mint, allspice, cinnamon, salt, and black pepper. Remove from heat and let it cool.
- In a bowl, mix the soaked bulgur with the cooled meat mixture. Squeeze the juice of half a lemon into the mixture and combine well.
- Preheat your oven to 220°C (428°F).
- Place the pita bread on a baking sheet lined with parchment paper. Spread a layer of tomato sauce evenly over each piece.
- Spread the kebbeh mixture over the tomato sauce, pressing it down slightly to adhere.
- Sprinkle the shredded mozzarella cheese over the top of the kebbeh layer.
- Drizzle the remaining tablespoon of olive oil over the pizzas and bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let cool for a few minutes, then cut into slices and serve hot.
