- Fine bulgur wheat - 100 grams
- Hot water - 150 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Mushrooms - 100 grams, finely chopped
- Walnuts - 50 grams, chopped
- Tomato paste - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, combine the fine bulgur wheat and hot water. Cover and let it soak for about 20 minutes until the bulgur is tender and has absorbed the water.
- While the bulgur is soaking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.
- Add the grated zucchini, grated carrot, and chopped mushrooms to the skillet. Cook for another 8-10 minutes until the vegetables are tender. Stir in the chopped walnuts, tomato paste, cumin, cinnamon, salt, and pepper, cooking for an additional 2 minutes. Remove from heat and stir in the fresh parsley and lemon juice.
- Preheat the oven to 200°C (400°F).
- Once the bulgur is ready, add 1 tablespoon of olive oil to the bowl along with a pinch of salt and mix well to form a dough-like consistency.
- Spread half of the bulgur mixture evenly in the bottom of a greased baking dish (approx. 20x20 cm). Layer the vegetable filling over the bulgur base, spreading it evenly. Finally, cover with the remaining bulgur mixture, pressing it down gently to create a flat surface.
- Bake in the preheated oven for 25-30 minutes until the top is golden brown and firm.
- Remove from the oven and let it cool for a few minutes before slicing into squares. Serve warm and enjoy!
