Ingredients

  • Fine bulgur wheat - 100 grams
  • Hot water - 150 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Mushrooms - 100 grams, finely chopped
  • Walnuts - 50 grams, chopped
  • Tomato paste - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, combine the fine bulgur wheat and hot water. Cover and let it soak for about 20 minutes until the bulgur is tender and has absorbed the water.
  2. While the bulgur is soaking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.
  3. Add the grated zucchini, grated carrot, and chopped mushrooms to the skillet. Cook for another 8-10 minutes until the vegetables are tender. Stir in the chopped walnuts, tomato paste, cumin, cinnamon, salt, and pepper, cooking for an additional 2 minutes. Remove from heat and stir in the fresh parsley and lemon juice.
  4. Preheat the oven to 200°C (400°F).
  5. Once the bulgur is ready, add 1 tablespoon of olive oil to the bowl along with a pinch of salt and mix well to form a dough-like consistency.
  6. Spread half of the bulgur mixture evenly in the bottom of a greased baking dish (approx. 20x20 cm). Layer the vegetable filling over the bulgur base, spreading it evenly. Finally, cover with the remaining bulgur mixture, pressing it down gently to create a flat surface.
  7. Bake in the preheated oven for 25-30 minutes until the top is golden brown and firm.
  8. Remove from the oven and let it cool for a few minutes before slicing into squares. Serve warm and enjoy!
