- Chicken breast - 250 grams
- Pomegranate seeds - 100 grams
- Red onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Skewers - 2 (if wooden, soaked in water for 30 minutes)
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, salt, and black pepper to create a marinade.
- Cut the chicken breast into 2.5 cm cubes and add them to the marinade. Mix well and let it marinate for at least 15 minutes.
- While the chicken is marinating, soak the skewers in water if using wooden skewers. Prepare the pomegranate seeds and chop the parsley.
- Preheat your grill or BBQ to medium-high heat.
- Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Once cooked, remove the kebabs from the grill and sprinkle with fresh parsley and pomegranate seeds before serving.
