Ingredients

  • Chicken breast - 250 grams
  • Pomegranate seeds - 100 grams
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers - 2 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into 2.5 cm cubes and add them to the marinade. Mix well and let it marinate for at least 15 minutes.
  3. While the chicken is marinating, soak the skewers in water if using wooden skewers. Prepare the pomegranate seeds and chop the parsley.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece.
  6. Grill the kebabs for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Once cooked, remove the kebabs from the grill and sprinkle with fresh parsley and pomegranate seeds before serving.
