Ingredients
- Chicken breast - 300 grams, cubed
- Red bell pepper - 1, cut into chunks
- Zucchini - 1, sliced
- Red onion - 1 small, cut into chunks
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Greek yogurt - 100 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice to create a marinade.
- Add the cubed chicken to the marinade, mixing well to coat. Cover and let it marinate in the refrigerator for at least 15 minutes.
- Thread the marinated chicken, red bell pepper, zucchini, and red onion onto skewers, alternating between the chicken and vegetables.
- Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- While the kebabs are grilling, prepare the garlic yogurt sauce by mixing Greek yogurt with minced garlic and chopped parsley. Season with a pinch of salt.
- Serve the kebabs hot with the garlic yogurt sauce on the side.
