Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Prepare the zucchini by trimming the ends and slicing them lengthwise into halves, then scoop out some of the flesh to create a cavity for the filling.
  2. In a bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  3. Stuff the zucchini halves with the meat mixture, pressing it in firmly to hold its shape.
  4. Preheat your grill or BBQ over medium-high heat and brush the grates with olive oil to prevent sticking.
  5. Thread the stuffed zucchini onto the skewers, placing them in a way that the meat is secure and won't fall off while grilling.
  6. Grill the kebabs for about 15-20 minutes, turning occasionally, until the meat is fully cooked and has nice grill marks.
