Ingredients
- Ground lamb or beef - 300 grams
- Zucchini - 2 medium (about 300 grams)
- Onion - 1 small (about 100 grams), finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Prepare the zucchini by trimming the ends and slicing them lengthwise into halves, then scoop out some of the flesh to create a cavity for the filling.
- In a bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Stuff the zucchini halves with the meat mixture, pressing it in firmly to hold its shape.
- Preheat your grill or BBQ over medium-high heat and brush the grates with olive oil to prevent sticking.
- Thread the stuffed zucchini onto the skewers, placing them in a way that the meat is secure and won't fall off while grilling.
- Grill the kebabs for about 15-20 minutes, turning occasionally, until the meat is fully cooked and has nice grill marks.
- Remove the kebabs from the grill and let them rest for a few minutes before serving.
- Serve the kebabs warm with a side of yogurt sauce or a fresh salad.
