Ingredients

  • Dried hibiscus flowers - 30 grams
  • Water - 500 ml
  • Sugar - 100 grams
  • Orange blossom water - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Cold water - 100 ml
  • Chopped pistachios - 20 grams (for garnish)

Steps

  1. In a saucepan, combine the dried hibiscus flowers and 500 ml of water. Bring to a boil and then simmer for 10 minutes.
  2. After simmering, strain the mixture into a bowl, discarding the hibiscus flowers. Return the liquid to the saucepan.
  3. Add sugar and orange blossom water to the liquid and stir until the sugar dissolves completely.
  4. In a separate bowl, mix cornstarch with 100 ml of cold water to create a slurry.
  5. Gradually add the cornstarch slurry to the hibiscus liquid, stirring constantly to avoid lumps. Cook over medium heat until the mixture thickens, about 5-7 minutes.
  6. Once thickened, pour the mixture into serving dishes or molds and let it cool to room temperature.
  7. Refrigerate for at least 2 hours until fully set.
  8. Before serving, garnish with chopped pistachios on top.
