Ingredients

  • Chickpeas - 120 grams, cooked and drained
  • Red onion - 1 small, finely diced
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large bowl, combine the chopped kale and a pinch of salt. Massage the kale with your hands for about 2-3 minutes until it becomes tender.
  2. Add the cooked chickpeas, pomegranate seeds, and diced red onion to the bowl with the kale.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, black pepper, and remaining salt to create a dressing.
  4. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  5. If using, sprinkle crumbled feta cheese and chopped parsley on top as a garnish.
