- Tahini - 60 grams

- Water - 100 ml
- Ground lamb - 200 grams
- Ground cinnamon - 1/2 teaspoon
- Ground allspice - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - for garnish
- Pine nuts - 20 grams (optional)
Steps
- Soak the chickpeas in water overnight, then drain and rinse them.
- In a pot, cover the soaked chickpeas with fresh water, bring to a boil, and simmer for about 30 minutes until tender. Drain and set aside.
- In a food processor, combine the cooked chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and water. Blend until smooth and creamy, adding more water if needed to achieve desired consistency.
- In a bowl, mix the ground lamb with cinnamon, allspice, paprika, and a pinch of salt. Form the mixture into small patties or skewers.
- Heat a grill or skillet over medium-high heat and cook the lamb patties for about 4-5 minutes on each side, until browned and cooked through.
- Spread the hummus onto a serving plate, and top it with the grilled lamb. Drizzle with olive oil and garnish with chopped parsley and pine nuts if using.
