Ingredients

  • Chickpeas - 200 grams (cooked)
  • Tahini - 2 tablespoons
  • Garlic - 1 clove (minced)
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Oats - 50 grams (finely ground)
  • Olive oil - 1 tablespoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium (sliced)
  • Cucumber - 1 small (sliced)
  • Red onion - 1/4 small (sliced)
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. In a food processor, combine cooked chickpeas, tahini, minced garlic, lemon juice, cumin, paprika, salt, and pepper. Blend until smooth.
  2. Transfer the mixture to a bowl and stir in the finely ground oats until well combined. Let it sit for 10 minutes to firm up.
  3. Shape the mixture into 2 burger patties.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until golden brown.
  5. Toast the whole wheat burger buns in the skillet for 1-2 minutes until lightly browned.
  6. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the patty, sliced tomato, cucumber, red onion, and chopped parsley. Top with the other half of the bun.
  7. Serve immediately with your favorite side.
