Ingredients

  • Chickpeas - 200 grams (canned or cooked)
  • Tahini - 50 grams
  • Garlic - 2 cloves
  • Lemon juice - 30 ml
  • Olive oil - 30 ml
  • Salt - 1 teaspoon
  • Cumin - 1 teaspoon
  • Ground lamb or beef - 200 grams
  • Onion - 1 small, finely chopped
  • Pine nuts - 30 grams, toasted
  • Paprika - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. If using dried chickpeas, soak them overnight and cook until tender. For canned chickpeas, drain and rinse them well.
  2. In a food processor, combine the chickpeas, tahini, garlic, lemon juice, olive oil, salt, and cumin. Blend until smooth, adding water if necessary to reach your desired consistency.
  3. In a skillet over medium heat, add a splash of olive oil and sauté the chopped onion until translucent.
  4. Add the ground lamb or beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the paprika and season with salt and pepper to taste. Cook for another 2 minutes, then remove from heat.
  6. To serve, spread the hummus on a plate and top with the spiced meat mixture. Garnish with toasted pine nuts and fresh parsley.
