Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 750 ml
  • Water - 250 ml
  • Long-grain rice - 100 grams
  • Fresh parsley - 1/4 cup, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes until the vegetables are slightly softened.
  3. Pour in the vegetable broth and water, then bring the mixture to a boil.
  4. Stir in the rice, dried thyme, salt, and black pepper. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and tender.
  5. Once the rice is done, remove the pot from heat and stir in the chopped parsley, chopped mint, and lemon juice.
  6. Adjust seasoning with additional salt and pepper if needed. Serve hot.
