Ingredients
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 750 ml
- Water - 250 ml
- Long-grain rice - 100 grams
- Fresh parsley - 1/4 cup, chopped
- Fresh mint - 2 tablespoons, chopped
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes until the vegetables are slightly softened.
- Pour in the vegetable broth and water, then bring the mixture to a boil.
- Stir in the rice, dried thyme, salt, and black pepper. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and tender.
- Once the rice is done, remove the pot from heat and stir in the chopped parsley, chopped mint, and lemon juice.
- Adjust seasoning with additional salt and pepper if needed. Serve hot.
