Ingredients

  • Basmati rice - 150 grams
  • Water - 350 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and bell pepper, cooking for an additional 3-4 minutes until the vegetables are slightly softened.
  4. Add the soaked and drained rice to the saucepan, stirring to coat the rice with the oil and vegetables. Cook for about 2 minutes, allowing the rice to toast slightly.
  5. Pour in the water, ground cumin, ground coriander, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and gently fold in the chopped parsley, mint, and toasted pine nuts before serving.
