- Basmati rice - 150 grams
- Water - 350 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 small, diced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pine nuts - 2 tablespoons, toasted
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and bell pepper, cooking for an additional 3-4 minutes until the vegetables are slightly softened.
- Add the soaked and drained rice to the saucepan, stirring to coat the rice with the oil and vegetables. Cook for about 2 minutes, allowing the rice to toast slightly.
- Pour in the water, ground cumin, ground coriander, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and gently fold in the chopped parsley, mint, and toasted pine nuts before serving.
