Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Fresh parsley, chopped - 30 grams
  • Fresh mint, chopped - 15 grams
  • Cherry tomatoes, halved - 100 grams
  • Cucumber, diced - 50 grams
  • Red onion, finely chopped - 30 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, combine quinoa and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  4. In a large bowl, combine the cooked quinoa, parsley, mint, cherry tomatoes, cucumber, and red onion.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the quinoa salad and toss gently to combine.
