- Green or brown lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 750 milliliters
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and celery to the pot and sauté for an additional 5 minutes until softened.
- Stir in the cumin and coriander, cooking for 1 minute until fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let simmer for 25-30 minutes, or until the lentils are tender.
- Once cooked, add the chopped parsley, cilantro, salt, black pepper, and lemon juice. Stir well to combine.
- Serve hot, garnished with additional herbs if desired.
