Ingredients

  • Green or brown lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 750 milliliters
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and celery to the pot and sauté for an additional 5 minutes until softened.
  4. Stir in the cumin and coriander, cooking for 1 minute until fragrant.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let simmer for 25-30 minutes, or until the lentils are tender.
  6. Once cooked, add the chopped parsley, cilantro, salt, black pepper, and lemon juice. Stir well to combine.
  7. Serve hot, garnished with additional herbs if desired.
