Ingredients

  • Couscous - 150 grams
  • Water - 300 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley, chopped - 30 grams
  • Fresh mint, chopped - 15 grams
  • Garlic, minced - 1 clove
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. In a medium saucepan, bring 300 ml of water to a boil. Add 1 teaspoon of salt.
  2. Once boiling, remove from heat and stir in 150 grams of couscous. Cover and let it sit for 5 minutes.
  3. In a small bowl, mix together the olive oil, minced garlic, lemon juice, black pepper, and paprika.
  4. Fluff the couscous with a fork and then pour the olive oil mixture over it, tossing to combine.
  5. Add the chopped parsley and mint to the couscous, mixing gently until everything is evenly distributed.
  6. Taste and adjust seasoning with more salt or lemon juice if desired.
  7. Serve warm as a side dish or enjoy it as a light main course.
