Ingredients
- Couscous - 150 grams
- Water - 300 ml
- Olive oil - 2 tablespoons
- Fresh parsley, chopped - 30 grams
- Fresh mint, chopped - 15 grams
- Garlic, minced - 1 clove
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- In a medium saucepan, bring 300 ml of water to a boil. Add 1 teaspoon of salt.
- Once boiling, remove from heat and stir in 150 grams of couscous. Cover and let it sit for 5 minutes.
- In a small bowl, mix together the olive oil, minced garlic, lemon juice, black pepper, and paprika.
- Fluff the couscous with a fork and then pour the olive oil mixture over it, tossing to combine.
- Add the chopped parsley and mint to the couscous, mixing gently until everything is evenly distributed.
- Taste and adjust seasoning with more salt or lemon juice if desired.
- Serve warm as a side dish or enjoy it as a light main course.
